Handmade and hand-pulled into existence, the noodles at Fuqing Lanzhou Noodles stick to the original methods of noodle-crafting that have made the city of Lanzhou famous. It all starts with a humble yet malleable beginning: a lump of dough. What happens after that is nothing short of impressive, as noodle masters stretch, swing, twist, and slap the dough onto their work surface, creating a thick, stretchy rope. They then dissect that rope into shorter sections, which are then similarly worked into longer, thinner ribbons. Neither knife nor machine helps with the process, making these noodles wholly handcrafted. And the care with which they're made comes through in the final dish; whether mixed in a soup or fried and topped with minced meat, their hearty flavor and chewy texture remind diners that these noodles were made fresh, just for them.
