Here, Indian favorites like aloo phing tsey, beef curry, and chili chicken mingle with Tibetan momos, dumplings stuffed with beef, veggies, or chicken. There's also shabhaley, a traditional Tibetan deep-fried bread filled with tender beef or chicken, and lineup of steamy Tibetan soups. To create a totally balanced meal, the chefs whip up thalis, an Indian and Nepalese platter made up of small plates that comprise six flavors: sweet, salty, bitter, sour, astringent, and spicy.
