At Cazba Restaurant, chefs make these healthy Persian recipes daily from locally-sourced and organic ingredients. The Mirza Ghasemi, for example, is comprised of oven-baked eggplant, egg, mint, and garlic served atop warmed pita. And they serve heartier fare too, like skewers of roasted lamb or chicken, or Gheimeh, which uses a special spice mix to flavor beef, split peas, and rice in a tomato sauce.
